This week was a good week for me and my leisure goals. It is getting cooler outside so I have been trying to run outside more often. I enjoy running outdoors but running on the road is completely different from track or treadmill running. My stride has improved a lot since I started in the summer. My pace is also improved. I enjoy running outdoors because it is nice to have different scenery around you to focus on. The difference in landscape also plays into my workout because I can feel more soreness in my legs when I run outside due to the uneven ground and small hills that I have ran. I have also been enjoying a weekly spin class at the rec. I love the spin bikes there and the Tuesday evening class is awesome. The instructor is super motivating and energizing and she really knows how to get you sweating. The class is a half hour of spin followed by a half hour of yoga. Ending with a half hour of yoga is the perfect way to cap off a bike ride. After those spin intervals, the yoga really helps to loosen and stretch your body, especially your leg muscles out. The yoga also helps wind your body and mind down and get you ready for your evening. I would really like to do more yoga and Pilates so I will hopefully be focusing more on those workouts this upcoming month.
For my food entry this week, I attempted… Sushi!!! My boyfriend and I love to eat at Fujiyama, but being a poor college student, I don’t get the opportunity to eat there as often as I want. So, I decided to bring Fujiyama to my house. I attempted spicy tuna rolls, spicy crab rolls and an appetizer of tuna tataki. For the seared tuna, I lightly salted the steak then rubbed it in a ginger and black peppercorn rub. I than heated evoo over a hot skillet and lightly seared each side of the steak for 30 seconds. I then deglazed my skillet with ponzu sauce which I than poured over the steak. I was shocked at how delicious this dish turned out; it was pretty much a 10 in my book. Next, I made sushi. I cooked Japanese rice in a rice cooker and mixed it with a rice wine sauce to sweeten it. I than chopped up tuna steak and mixed it with chili sauce and mayo which was then mixed into the tuna. I flattened my sushi roller and placed a square of seaweed on top. I proceeded to layout the rice and tuna and attempted to roll my first roll. Rolling the sushi turned out to be the most difficult part. The technique is kind of tricky but after I rolled a few I caught on and my rolls started looking better. Regardless of how they looked, they all tasted great and I will probably be attempting to roll some more this week!
