I had a very long week this week as I am sure most of you did with midterms and homecoming. I am also finding it really hard to find motivation to write about my workout routines on a weekly basis so in an effort to re-motivate myself, I have reconstructed a new leisure goal. Along with my continuing work out regimen, I am now going to focus my blog on the nutritional aspect of my goal. I try to cook 3 healthy meals a week in an effort to eat in and introduce my veggie hating room mates to new foods. I have started to introduce them to foods and dishes that have not been open to trying before. This week was squash!!! Although some may find cooking to be a painful chore, i find it very relaxing and enjoy cooking for myself. I find it a relief to know what it is you are fueling your body with. My room mates consider tomato sauce a veggie, so having them try veggies in their conventional form is a daunting task, but not impossible. I have found that if you top veggies with cheese, it usually is more appealing to those who aren't veggie fans. First I cut the squash into 1/2 inch segments and dusted them lightly with extra virgin olive oil. I then sprinkled some garlic powder and Parmesan cheese. I placed the squash on a baking pan and broiled them in the oven for approx 8 minutes. The squash comes out soft in the middle with a little crunch on top from the cheese. My room mates really enjoyed this and I served it with baked chicken. I marinated 3 chicken breasts in Italian dressing than covered and cooked them in the oven at 350 degrees for 45 minutes, cooking uncovered for the last 10 minutes. My room mates really didn't pay much attention to my in the kitchen at first, but as soon as the smells started leaking from the kitchen, they started to pry. Overall they quite enjoyed the meal, but not enough to do the dishes after!!!
